It seems the colors are finally changing and fall is in the air! Hooray! This is one of my very favorite times of the year. I love the crisp morning air, beautiful colors, and amazing fall flavors! PUMPKIN! Yummy! These soft cookies are so very delicious. They remind me of a pumpkin roll, but in a cookie! I keep pumpkin on hand all year so that I can enjoy these and other yummy pumpkin recipes anytime. Give them a try and let me know what you think!
Soft Pumpkin Cookies with Pumpkin Spice Cream Cheese Frosting
*Recipe by Crazy Daisy
1 cup sugar
1 cup shortening
3 cups brown sugar
4 eggs, slightly beaten
1 (29 oz.) can pumpkin, reserve 1/4 cup for frosting
2 1/2 cups white flour
2 1/2 cups whole wheat flour
1 1/2 teaspoons baking soda
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon lemon juice
1 teaspoon ginger
2 teaspoons cinnamon
2 teaspoons nutmeg
2 teaspoons vanilla
1 1/2 cups chopped nuts (optional)
1 recipe for Pumpkin Spice Cream Cheese Frosting, below
Preheat oven to 375 degrees. In a mixing bowl, cream sugar, shortening, and brown sugar. Add eggs, mix well. Add pumpkin, mix well.
In a bowl, whisk together flours, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg. Pour into wet ingredients and mix well.
Add lemon juice and vanilla, stir well. Mix in nuts, optional.
Drop by 1/8 cup rounds onto an ungreased cookie sheet. Bake for 10-12 minutes or until set in the middle. When pressed gently, the tops will spring back just like a cake. Cool on a wire rack and then on wax paper. After completely cool, frost with Pumpkin Spice Cream Cheese Frosting.
Pumpkin Spice Cream Cheese Frosting
8 oz. cream cheese, softened
1/4 cup butter, softened
1/4 cup pumpkin1/2 teaspoon vanilla
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
3 cups powdered sugar
