Summer-time, well almost anyways - wishful thinking on my part! We eat this salad all summer long! It is soooo fresh and yummy! The strawberries and avocados compliment the dressing perfectly.This is the salad's most basic version. For special occasions - or even just for times when you actually plan accordingly and manage to put all the right ingredients on your grocery list, try adding red onions, feta or Gorgonzola cheese, and walnuts. Or make it a meal and add grilled chicken! Super delish! It's perfect for your Mother's Day brunch, lunch, or even dinner. Don't you think?
Strawberry Avocado Salad

Basic Ingredients
1 pound of strawberries, cleaned and sliced
1 medium red onion, sliced into rings (I find it easier to pick the onions out if they are sliced in rings and not chopped)
2-3 avocados, sliced
1 recipe Garlic Dijon Red Wine Vinaigrette
1 recipe Garlic Dijon Red Wine Vinaigrette
Try adding:
2- oz. feta or gorgonzola or feta cheese
1/4-1/2 cup pecans or walnuts
2-3 grilled sliced chicken breasts

Directions
Place lettuce in a large shallow bowl. Layer the rest of the ingredients over the top. Serve with Garlic Dijon Red Wine Vinaigrette.

I've never seen strawberries and avocado together. They are two of my favorites, though, and eat them (separately) all summer long, too. Will have to try them together.
ReplyDeleteI never would have thought to put avocados and strawberries together! With this pregnancy, I've found every excuse I can to eat avocados--and this looks perfect to me! Love your idea of adding grilled chicken. Yummo!

I made this for dinner, adding chicken, walnuts and goat cheese. SO YUMMY! I made the salad dressing too, but used balsamic instead of red wine vinegar. It was a hit in my house!! (except for three year old "I-don't-eat-salad" Payton) Can't wait to try some more.
